Oxygen Isolation: After the red cherries are carefully hand-picked, they are placed in specially designed, airtight tanks to completely isolate them from oxygen.

Flavor Development: Under controlled pressure and heat in the cold environment of Haraz, the natural sugars within the fruit begin to penetrate the heart of the "kernel" (seed), creating complex fruity notes and a unique flavor that cannot be achieved through traditional methods.
